Prepare Dough

    Mix the dough

    In a large mixing bowl, combine 2 cups of all-purpose flour, 2 large eggs, and 1 tsp of salt. Mix until a rough dough forms.

    Knead the dough

    Transfer the dough onto a floured surface and knead for about 5-7 minutes until smooth. Wrap in plastic wrap and let it rest for 30 minutes.

Prepare Filling

    Mix the filling ingredients

    In a bowl, combine 1 cup of ricotta cheese, 1 cup of grated Parmesan cheese, 1 cup of cooked and chopped spinach, 2 minced garlic cloves, 1 tsp of salt, and 1 tsp of black pepper. Mix well until fully combined.

Assemble Ravioli

    Roll out the dough

    After resting the dough, roll it out on a floured surface to about 1/8 inch thick.

    Cut the ravioli

    Use a round cutter or a glass to cut circles from the rolled dough. Place a small spoonful of the filling in the center of each circle.

    Seal the ravioli

    Moisten the edges of the dough with water and fold over to create a half-moon shape. Press to seal tightly.

Coat Ravioli

    In a shallow bowl, place 2 cups of bread crumbs and in another bowl, beat 1 egg.

    Dip each ravioli in the beaten egg and then coat with bread crumbs, ensuring they are fully covered.

Fry Ravioli

    In a large pot or deep fryer, heat 4 cups of oil to 350°F (175°C).

    Carefully place the coated ravioli into the hot oil in batches, frying for about 3-4 minutes until golden brown. Remove and drain on paper towels.

Prepare Dipping Sauce
