Pasta Preparation

Cook the Spaghetti
Bring a large pot of salted water to a boil. Add the spaghetti and cook according to the package instructions until al dente, about 8-10 minutes. Reserve 1 cup of pasta water, then drain the spaghetti.

Cook the Pancetta
In a large skillet over medium heat, add the pancetta and cook until it is crispy, about 5-7 minutes. Add the minced garlic and sauté for an additional 1 minute until fragrant.

Prepare the Sauce
In a bowl, whisk together the eggs, grated Parmesan cheese, and a generous amount of freshly ground black pepper. Set aside.

Combine Pasta and Sauce
Once the spaghetti is cooked and drained, add it directly to the skillet with the pancetta and garlic. Remove the skillet from heat. Quickly pour the egg and cheese mixture over the hot pasta, tossing everything together vigorously to create a creamy sauce. If the sauce is too thick, add a little reserved pasta water to reach the desired consistency.

Taste the pasta and season with salt and more black pepper if needed.

Serve immediately, garnished with chopped parsley and additional grated Parmesan cheese if desired.
