Prepare the Quinoa
Rinse the quinoa under cold water to remove any bitterness. Combine 1 cup of quinoa with 2 cups of water in a saucepan. Bring to a boil, then reduce heat to low, cover, and simmer for about 15 minutes until the quinoa is fluffy and water is absorbed.

Chop the Vegetables
While the quinoa is cooking, chop the carrots, bell peppers, zucchini, and cherry tomatoes into bite-sized pieces.

Sauté the Vegetables
In a large skillet, heat 2 tablespoons of olive oil over medium heat. Add the chopped carrots and sauté for about 5 minutes until they start to soften. Then add the bell peppers and zucchini, and continue to sauté for another 3-4 minutes.

Add Cherry Tomatoes and Chickpeas
Stir in the cherry tomatoes and cooked chickpeas. Cook for an additional 2-3 minutes until the tomatoes soften slightly.

Season the Mixture
Add the fresh basil, salt, and black pepper to the skillet. Drizzle with the remaining tablespoon of olive oil, and stir well to combine all ingredients.

Once the quinoa is cooked, fluff it with a fork and serve it on a plate. Top with the sautéed vegetable and chickpea mixture. Finally, sprinkle crumbled feta cheese on top before serving.
