Preparation

    Prepare the Ingredients

    Rinse the romaine lettuce and fresh spinach under cold water. Pat dry and chop the romaine into bite-size pieces. Set aside.

    Prepare the Salmon

    Season the salmon fillets with salt and black pepper on both sides.

    Cook the Pancetta

    In a skillet over medium heat, cook the pancetta slices until crispy. Remove from the skillet and place on paper towels to drain excess fat. Chop into small pieces.

    Roast the Red Peppers

    If using jarred roasted red peppers, drain and chop them into bite-size pieces.

    Sear the Salmon

    In the same skillet used for the pancetta, add a little olive oil if needed and increase the heat to medium-high. Once hot, add the salmon fillets skin-side down and sear for about 4-5 minutes until the skin is crispy. Flip the salmon and cook for another 3-4 minutes or until cooked through.

    Assemble the Salad

    In a large mixing bowl, combine the chopped romaine, spinach, crispy pancetta, roasted red peppers, and capers. Toss gently to combine.

    Serve

    Divide the salad among serving plates, top with the seared salmon fillets, sprinkle with asiago cheese, and drizzle with basil vinaigrette. Enjoy!
