Chicken Marinade

Method

Marinating the Chicken

  1. 1

    Prepare the Marinade

In a bowl, mix olive oil, minced garlic, lemon juice, dried oregano, salt, and black pepper.

  2. 2

    Marinate the Chicken

Place the chicken breasts in a large resealable bag or shallow dish. Pour the marinade over the chicken, ensuring each piece is coated. Seal the bag or cover the dish and refrigerate for at least 30 minutes, or up to 2 hours for better flavor.

Preparing the Vegetables

  1. 3

    Prep the Vegetables

While the chicken is marinating, prepare the vegetables. Slice the bell peppers, zucchini, and red onion. Halve the cherry tomatoes and chop the fresh basil.

Cooking the Chicken and Vegetables

  1. 4

    Preheat the Oven

Preheat your oven to 375°F (190°C).

  2. 5

    Sear the Chicken

In a large oven-safe skillet, heat a tablespoon of olive oil over medium-high heat. Remove the chicken from the marinade and sear each piece for about 3-4 minutes on each side until golden brown.

  3. 6

    Add the Vegetables

Once the chicken is seared, add the sliced bell peppers, zucchini, red onion, and halved cherry tomatoes around the chicken in the skillet.

  4. 7

    Top with Cheese

Sprinkle the shredded mozzarella and grated Parmesan cheese evenly over the chicken and vegetables.

  5. 8

    Bake the Dish

Transfer the skillet to the preheated oven and bake for 20-25 minutes, or until the chicken is cooked through (internal temperature of 165°F/74°C) and the cheese is melted and bubbly.

Serving

  1. 9

    Plate and Serve

Remove the skillet from the oven and let it rest for a few minutes. Garnish with chopped fresh basil before serving. Enjoy your Pollo Verona with a side of pasta or crusty bread.
