Chicken Piccata

Method

Prepare the Chicken Piccata

    Prepare the Chicken

    Season the chicken breasts with salt and black pepper on both sides. Dredge each piece in all-purpose flour, shaking off the excess.

    Sear the Chicken

    In a large skillet, heat olive oil over medium-high heat. Add the chicken breasts and cook for about 4-5 minutes on each side until golden brown and cooked through. Remove the chicken from the skillet and set aside.

    Make the Sauce

    In the same skillet, melt 2 tablespoons of butter, then add minced garlic and sauté for about 30 seconds until fragrant. Pour in the white wine, scraping up any browned bits from the bottom of the pan. Let it simmer for 2-3 minutes.

    Finish the Sauce

    Add the fresh lemon juice and capers to the skillet. Return the chicken to the skillet, cooking for an additional 2-3 minutes until heated through. Stir in the remaining butter and sprinkle with chopped parsley before serving.

Prepare the Pasta or Potatoes

    Cook the Angel Hair Pasta

    In a pot of boiling salted water, cook the angel hair pasta according to package instructions until al dente. Drain and set aside.

    Prepare the Baby Red Potatoes (Optional)

    If serving with baby red potatoes, boil them in salted water until fork-tender, about 15-20 minutes. Drain and serve warm.

    Make Garlic Mashed Potatoes (Optional)

    For garlic mashed potatoes, peel and chop the baby red potatoes, boil them until tender, then mash with butter, minced garlic, and milk until creamy. Season with salt and pepper to taste.
