Pasta Preparation

    Mixing the Dough

    In a large mixing bowl, combine the flour and salt. Make a well in the center and crack the eggs into the well. Add olive oil.

    Kneading

    Using a fork, gradually incorporate the flour into the eggs until a dough begins to form. Transfer the dough to a floured surface and knead for about 8-10 minutes until smooth and elastic.

    Resting the Dough

    Wrap the dough in plastic wrap and let it rest for 30 minutes at room temperature.

    Rolling Out the Dough

    After resting, cut the dough into four pieces. Keep the pieces you are not using covered. Roll out each piece using a pasta machine or a rolling pin to your desired thickness.

    Cutting the Pasta

    Cut the rolled-out dough into your desired pasta shape (e.g., tagliatelle, fettuccine). Dust with flour to prevent sticking.

Sauce Preparation

    Sautéing Garlic

    In a large skillet, heat the olive oil over medium heat. Add the minced garlic and sauté for about 1 minute until fragrant.

    Adding Tomatoes

    Add the crushed tomatoes to the skillet and stir well.

    Seasoning the Sauce

    Stir in the dried basil, oregano, sugar, salt, and black pepper. Let the sauce simmer for about 15-20 minutes, stirring occasionally.

    Finishing Touches

    Once the sauce has thickened, stir in the grated Parmesan cheese and chopped fresh basil. Mix well and remove from heat.

Cooking the Pasta

    Boiling Water

    Bring a large pot of salted water to a boil.

    Cooking Pasta

    Add the fresh pasta to the boiling water and cook for 2-4 minutes, or until al dente. Fresh pasta cooks much quicker than dried pasta.

    Draining Pasta

    Reserve 1 cup of pasta water, then drain the pasta and return it to the pot.

    Combining Pasta and Sauce

    Pour the sauce over the drained pasta, adding reserved pasta water as needed to reach desired consistency. Toss to combine.
