Dough Preparation

Activate Yeast
In a small bowl, combine warm water and sugar. Sprinkle yeast over the top and let sit for about 5-10 minutes until frothy.

Mix Dough
In a large mixing bowl, combine flour and salt. Make a well in the center and add the olive oil and the yeast mixture. Mix until a dough forms.

Knead Dough
Transfer the dough to a floured surface and knead for about 8-10 minutes until smooth and elastic.

Let Dough Rise
Place the dough in a lightly oiled bowl, cover with a damp cloth, and let rise in a warm place for 1 hour or until doubled in size.

Preheat Oven
Preheat your oven to 475°F (245°C). If using a pizza stone, place it in the oven to heat as well.

Prepare Tomatoes
Slice fresh tomatoes into thin rounds. Set aside.

Prepare Cheese
Tear fresh mozzarella into small pieces.

Shape Pizza
Once the dough has risen, punch it down and roll it out on a floured surface to your desired thickness (about 12 inches in diameter).

Add Toppings
Transfer the rolled-out dough to a baking sheet or pizza peel. Arrange sliced tomatoes evenly over the surface, followed by torn mozzarella pieces and basil leaves. Drizzle with olive oil and season with salt and black pepper.

Bake Pizza
Carefully slide the pizza onto the preheated pizza stone or place the baking sheet in the oven. Bake for 12-15 minutes, or until the crust is golden and the cheese is bubbling.

Remove the pizza from the oven, let it cool for a few minutes, slice, and serve hot.
