Preparing the Base

Combine Milk and Cream
In a medium saucepan, combine 2 cups of whole milk and 1 cup of heavy cream. Heat over medium heat until it begins to steam, but do not let it boil.

Prepare Egg Mixture
In a separate bowl, whisk together 4 egg yolks, 3 tablespoons of granulated sugar, and a pinch of salt until the mixture is pale and slightly thickened.

Add Vanilla
Split the vanilla bean lengthwise, scrape out the seeds, and add both the seeds and the bean pod into the combined mixture.

Cook the Mixture
Return the mixture to the saucepan and cook over low heat, stirring constantly, until it thickens enough to coat the back of a spoon (about 10-15 minutes).

Cool the Base
Remove from heat and strain the mixture through a fine-mesh sieve into a bowl. Let it cool to room temperature, then refrigerate for at least 4 hours or overnight.
Churning the Gelato

Prepare Ice Cream Maker
Ensure your ice cream maker is frozen (if applicable) according to the manufacturer's instructions.

Churn the Base
Once the gelato base is chilled, pour it into the ice cream maker and churn according to the manufacturer's instructions until it reaches a soft-serve consistency (usually about 20-30 minutes).

Add Flavor Variations (Optional)
If desired, mix in flavor variations like 1 tablespoon of cocoa powder, 1 cup of pureed fresh strawberries, 1 cup of chopped pistachios, or 1 cup of cooled brewed coffee during the last few minutes of churning.
Freezing the Gelato

Transfer to Freezer Container
Transfer the churned gelato to an airtight container. Smooth the top with a spatula.

Freeze Until Firm
Cover the container and freeze for at least 4-6 hours, or until the gelato is firm enough to scoop.
