Preparation

Cook Chicken Soto Base

1. Prepare Broth

In a large pot, combine the whole chicken, water, salt, ginger, garlic, lemongrass, turmeric powder, galangal, and coriander powder.

2. Simmer

Bring the mixture to a boil, then reduce the heat to low. Cover and simmer for about 1 hour, or until the chicken is fully cooked and tender.

3. Remove Chicken

Once cooked, carefully remove the chicken from the pot and set it aside to cool. Strain the broth to remove solids and return the liquid to the pot.

4. Shred Chicken

Once cool enough to handle, shred the chicken meat into bite-sized pieces, discarding the skin and bones.

Prepare Soto Garnishes

5. Cook Rice Noodles

In a separate pot, cook rice noodles according to package instructions until tender. Drain and set aside.

6. Prepare Garnishes

Halve the hard-boiled eggs, slice the green onions, and rinse the bean sprouts under cold water.

Assemble Soto

7. Combine Ingredients

In bowls, add a portion of rice noodles, followed by shredded chicken. Pour hot broth over the top.

8. Add Garnishes

Top with hard-boiled eggs, bean sprouts, sliced green onions, and fried shallots. Serve with lime wedges and chili sauce on the side.
