Cooking the Pasta

Boil Water
In a large pot, bring 4 quarts of water to a rolling boil. Add 1 tsp of salt.

Cook Pasta
Add the bow tie pasta to the boiling water and cook according to package instructions until al dente, usually around 8-10 minutes.

Drain Pasta
Once cooked, drain the pasta in a colander and set aside. Reserve 1/2 cup of pasta water.
Preparing Chicken and Sauce

Cook Chicken
In a large skillet, heat 2 tablespoons of olive oil over medium heat. Season 4 chicken breasts with salt and black pepper. Add the chicken to the skillet and cook for 6-7 minutes on each side, or until golden brown and cooked through. Remove the chicken from the skillet and let rest.

Make Sauce
In the same skillet, add minced garlic and sauté for about 1 minute until fragrant. Pour in 1 cup of heavy cream, stirring to combine. Bring to a gentle simmer.

Add Cheese and Spinach
Once the cream is simmering, slowly add in 1 cup of grated Asiago cheese, stirring until melted. Add 2 cups of fresh spinach and cook until wilted, about 2 minutes.

Combine Pasta and Chicken
Slice the cooked chicken breasts and add them to the sauce, along with the drained bow tie pasta. Toss to combine, adding reserved pasta water as needed to loosen the sauce.
