Crust Preparation

    Prepare the Crust

    In a medium bowl, combine graham cracker crumbs, granulated sugar, and melted butter. Mix until well combined and crumbly.

    Form the Crust

    Press the mixture firmly into the bottom of a 9-inch springform pan to create an even layer. Bake in a preheated oven at 350°F (175°C) for 8-10 minutes, then remove and let cool.

Cheesecake Filling Preparation

    Make the Cheesecake Filling

    In a large mixing bowl, beat softened cream cheese and granulated sugar together until smooth and creamy.

    Add Remaining Ingredients

    Add sour cream, vanilla extract, and eggs (one at a time), mixing on low speed until just combined. Do not overmix.

    Pour Filling

    Pour the cheesecake filling over the cooled crust in the springform pan, smoothing the top with a spatula.

    Bake the Cheesecake

    Bake in the preheated oven at 325°F (160°C) for 55-65 minutes, or until the center is set but slightly jiggly. Turn off the oven and let the cheesecake cool in the oven with the door ajar for 1 hour.

    Chill the Cheesecake

    After cooling, refrigerate the cheesecake for at least 4 hours, preferably overnight.

Strawberry Glaze Preparation

    Prepare the Glaze

    In a saucepan over medium heat, combine sliced strawberries, granulated sugar, and water. Stir occasionally and cook until the strawberries release their juices, about 5 minutes.

    Thicken the Glaze

    In a small bowl, mix cornstarch with 2 tablespoons of water to make a slurry. Pour the slurry into the saucepan and cook for another 2-3 minutes, until the mixture thickens. Remove from heat and let cool.

Assembly

    Top the Cheesecake

    Once the cheesecake is completely chilled, pour the strawberry glaze over the top, spreading evenly with a spatula.
