Cooking the Pasta

    Boil the Pasta

    In a large pot, bring water to a boil. Add 1 tablespoon of salt and the cavatappi pasta. Cook according to package instructions until al dente, usually about 8-10 minutes.

    Once cooked, drain the pasta in a colander and set it aside. Do not rinse.

Making the Cheese Sauce

    In a medium saucepan over medium heat, melt 50 grams of butter. Once melted, add 50 grams of all-purpose flour. Stir continuously for about 2 minutes until the mixture is bubbling but not browned.

    Gradually whisk in 500 ml of milk to the roux, ensuring that there are no lumps. Continue to cook while stirring until the sauce thickens, about 5-7 minutes.

    Incorporate Cheeses and Seasonings

    Lower the heat and add 200 grams of shredded cheddar cheese, 200 grams of shredded mozzarella cheese, and 50 grams of grated Parmesan cheese to the sauce. Stir until the cheese has fully melted. Season with 1 teaspoon of mustard powder, 1 teaspoon of garlic powder, 1 teaspoon of salt, and 0.5 teaspoon of black pepper.

Combining and Baking

    Combine Pasta and Cheese Sauce

    In a large mixing bowl, combine the drained cavatappi pasta with the cheese sauce. Mix well until the pasta is fully coated.

    In a small bowl, mix 100 grams of bread crumbs with 2 tablespoons of olive oil and 2 tablespoons of chopped parsley. Mix until the crumbs are evenly coated.
