Calamari Preparation

    Prepare the Calamari

    In a large bowl, combine the cleaned and cut calamari rings with salt, black pepper, and garlic powder. Mix well and set aside.

    Prepare the Breading

    In another bowl, whisk together the eggs and milk until well combined. In a third bowl, mix the all-purpose flour and cornmeal together.

    Coat the Calamari

    Dip each calamari ring first into the egg mixture, allowing excess to drip off, then coat it in the flour and cornmeal mixture. Ensure each piece is evenly coated.

    Heat the Oil

    In a large pot or deep skillet, heat the vegetable oil over medium-high heat until it reaches 350°F (175°C).

    Fry the Calamari

    Fry the coated calamari rings in batches for about 2-3 minutes, or until golden brown and crispy. Avoid overcrowding the pot.

    Drain and Serve

    Using a slotted spoon, remove the fried calamari and drain on paper towels. Serve hot.

Marinara Sauce Preparation

    Sauté the Garlic

    In a saucepan, heat the olive oil over medium heat. Add the minced garlic and sauté for about 1-2 minutes until fragrant.

    Add the Tomatoes

    Pour in the crushed tomatoes and stir to combine.

    Season the Sauce

    Add the dried oregano, dried basil, salt, black pepper, and sugar to the sauce. Stir well and bring to a simmer.

    Reduce the heat to low and let the sauce simmer for about 15-20 minutes, stirring occasionally.

    Serve with Calamari

    Once the marinara sauce is ready, serve it alongside the fried calamari.
