    Cook the Cannelloni

    In a large pot, bring 4 cups of water to a boil. Add 1 tablespoon of salt. Once boiling, carefully add the cannelloni tubes and cook for 5 minutes. They should be slightly tender but firm. Drain and set aside.

Filling Preparation

    Prepare the Filling

    In a large mixing bowl, combine 15 oz of ricotta cheese, 2 cups of cooked and chopped spinach, 1 cup of grated Parmesan cheese, 1 beaten egg, 1 teaspoon of nutmeg, 0.5 teaspoon of salt, and 0.5 teaspoon of black pepper. Mix well until all ingredients are thoroughly combined.

    Stuff the Cannelloni

    Using a small spoon or a piping bag, carefully stuff each cannelloni tube with the ricotta and spinach mixture. Ensure each tube is filled but not overstuffed.

Sauce Preparation

    Make the Marinara Sauce

    In a saucepan, heat 1 tablespoon of olive oil over medium heat. Add 2 minced garlic cloves and sauté for about 1 minute until fragrant. Stir in 2 cups of marinara sauce and 1 tablespoon of basil. Simmer for 5 minutes.

    Assemble the Dish

    Preheat your oven to 375°F (190°C). Spread a thin layer of the marinara sauce on the bottom of a baking dish. Place the stuffed cannelloni tubes in a single layer over the sauce.

    Add More Sauce and Cheese

    Pour the remaining marinara sauce over the stuffed cannelloni. Sprinkle 2 cups of shredded mozzarella cheese generously over the top.

    Bake

    Cover the baking dish with aluminum foil and bake for 25 minutes. Then, remove the foil and bake for an additional 10-15 minutes until the cheese is bubbly and golden.

Garnishing

    Once baked, remove from the oven and let it cool for a few minutes. Garnish with chopped parsley before serving.
