Tres Huevos Rancheros Recipe
Three fresh eggs, any style, choice of roasted chicken breast or smoked pork carnitas with pepper jack cheese, refried beans and corn tortillas. Topped with pork green chili, sour cream and fresh pico de gallo.

Cook the Protein
If using roasted chicken breast, shred the chicken into bite-sized pieces. If using smoked pork carnitas, heat the pork in a skillet over medium heat until warmed through.

Prepare the Refried Beans
In a small saucepan, heat the refried beans over low heat, stirring occasionally until warmed through.

Prepare the Tortillas
In a separate skillet, warm the corn tortillas over medium heat for about 30 seconds on each side until pliable.
Cooking the Eggs

Cook the Eggs
In a non-stick skillet, heat a little oil over medium heat. Crack the three eggs into the skillet and cook to your desired doneness (sunny-side up, over-easy, or scrambled). Season with salt and pepper to taste.
Assembling the Dish

Layer the Ingredients
On a plate, place one corn tortilla as the base. Spread a layer of refried beans on top, followed by the cooked chicken or carnitas. Add a generous amount of pepper jack cheese on top of the protein.

Add the Eggs
Place the cooked eggs on top of the layered ingredients.

Add Toppings
Spoon the pork green chili over the eggs, then add a dollop of sour cream. Finish with a generous serving of pico de gallo on top.
