Lemon Butter Sauce

Prepare the Lemon Butter Sauce
In a small saucepan over medium heat, melt the unsalted butter. Once melted, add the minced garlic and sauté for about 1 minute until fragrant. Stir in the fresh lemon juice, chopped parsley, salt, and black pepper. Remove from heat and set aside.

Cook the Tilapia
Preheat a large skillet over medium-high heat. Add olive oil and let it heat for about 1 minute. Season the tilapia fillets with salt and black pepper on both sides. When the oil is hot, carefully place the fillets in the skillet. Cook for about 3-4 minutes on each side, or until the fish flakes easily with a fork. Once cooked, drizzle the prepared lemon butter sauce over the fillets.

Make the Rice Pilaf
In a medium saucepan, heat 1 tablespoon of olive oil over medium heat. Add the chopped onion and sauté until translucent, about 5 minutes. Add the long-grain rice and stir to coat it in the oil. Pour in the chicken broth and add salt. Bring to a boil, then reduce heat to low, cover, and simmer for about 15-20 minutes, or until the rice is tender and the liquid is absorbed.

Prepare the Sides
While the tilapia and rice are cooking, prepare your choice of side (e.g., steam broccoli or green beans). Additionally, toast the Texas Toast according to package instructions until golden brown.
