Fish Preparation

Make the Batter
In a large bowl, whisk together the all-purpose flour, cornstarch, baking powder, salt, and black pepper.

Add Beer
Gradually pour in the cold beer (or sparkling water) and stir until smooth. Set aside to rest for about 15 minutes.

Heat Oil
In a deep frying pan, heat the vegetable oil over medium-high heat until it reaches 350°F (175°C).

Coat the Cod
Dredge each cod fillet in the batter, allowing excess to drip off.

Fry the Cod
Carefully place the battered cod into the hot oil, frying in batches if necessary. Fry for about 4-5 minutes or until golden brown and cooked through. Remove and drain on paper towels.
French Fries Preparation

Prepare the Potatoes
Peel the russet potatoes and cut them into thick strips to make fries.

Soak the Fries
Soak the cut potatoes in cold water for at least 30 minutes to remove excess starch.

Fry the Potatoes
In the same oil used for frying the fish, fry the soaked potatoes in batches until golden and crispy, about 5-7 minutes. Remove and drain on paper towels, then season with salt.

Mix the Ingredients
In a bowl, combine mayonnaise, finely chopped dill pickles, capers, lemon juice, salt, and black pepper. Mix well until fully combined.

Toast the Texas Bread
In a skillet or toaster, lightly toast the Texas toast until golden brown.

Plate the Dish
Serve the golden-fried cod with French fries, a side of your choice, and toasted Texas toast. Offer the tartar sauce on the side.
