Cook Hash
In a large skillet, heat olive oil over medium heat. Add the diced onion and bell pepper, cooking until softened, about 3-4 minutes.

Add Corned Beef
Stir in the corned beef, salt, and black pepper. Cook for an additional 5-7 minutes until everything is heated through and crispy.

Cook Eggs
In a non-stick skillet, melt butter over medium-low heat. Pour in the egg mixture and stir gently with a spatula until the eggs are softly scrambled, about 3-4 minutes.

Prepare Potatoes
Grate the medium potatoes and rinse them under cold water to remove excess starch.

Squeeze Water Out
Using a clean kitchen towel, squeeze out excess moisture from the grated potatoes.

Prepare Toast
Toast the bread or English muffin slices in a toaster until golden brown.

Make Pancakes
In a bowl, mix the pancake mix with water or milk until just combined. Heat a non-stick skillet over medium heat and pour in batter for pancakes. Cook until bubbles form on the surface, then flip and cook until golden on both sides.
