Method
Chicken-Fried Chicken
- 1
Prepare the Chicken
Pound the chicken breasts to an even thickness using a meat mallet.
- 2
Make the Breading Station
In one bowl, combine flour, salt, black pepper, and garlic powder. In another bowl, whisk together buttermilk and egg.
- 3
Bread the Chicken
Dip each chicken breast first into the flour mixture, then into the buttermilk mixture, and finally back into the flour mixture, ensuring a good coating.
- 4
Fry the Chicken
In a large skillet, heat vegetable oil over medium heat. Once hot, fry the chicken for about 5-7 minutes on each side, or until golden brown and cooked through. Remove and drain on paper towels.
Sausage Gravy
- 5
Cook the Sausage
In a saucepan over medium heat, cook the breakfast sausage until browned and crumbled.
- 6
Make the Roux
Sprinkle flour over the cooked sausage and stir well to combine. Cook for about 1 minute.
- 7
Add Milk
Gradually whisk in the milk, stirring constantly until the gravy thickens. Season with salt, black pepper, and red pepper flakes.

- 8
Prepare the Potatoes
Wash and cut the red skin potatoes into quarters.
- 9
- 10
Buttermilk Biscuits
- 11
Preheat Oven
Preheat your oven to 450°F (230°C).
- 12
Mix Dry Ingredients
In a bowl, mix flour, baking powder, and salt.
- 13
Cut in Butter
Add cold butter to the flour mixture and cut in using a pastry cutter until the mixture resembles coarse crumbs.
- 14
Add Buttermilk
Stir in buttermilk until just combined. Do not overmix.
- 15
Shape and Bake
Turn the dough onto a floured surface, pat to 1-inch thickness, and cut out biscuits. Place on a baking sheet and bake for 12-15 minutes until golden.
