Preparing Potatoes
1. Cook the Potatoes
In a large skillet, heat olive oil over medium heat. Add the country potatoes, salt, and pepper. Cook for about 15-20 minutes, stirring occasionally, until the potatoes are golden brown and cooked through. Remove from skillet and set aside.
Cooking Bacon and Eggs
2. Cook the Bacon
In the same skillet, add the bacon slices and cook until crispy. Remove bacon from skillet and place on paper towels to drain excess fat.
Adding Vegetables and Cheese
4. Sauté Vegetables
In the same skillet, add mushrooms, onions, and tomatoes. Sauté for about 5 minutes until tender. Add the fresh spinach and cook until wilted. Mix in the scrambled eggs and crumbled bacon.
5. Melt Swiss Cheese
Sprinkle Swiss cheese over the top of the mixture in the skillet, cover, and let it sit on low heat until cheese is melted.
