Method

For the Buttermilk Biscuits

    Prepare the Dough

    Preheat your oven to 425°F (220°C). In a large bowl, combine the flour, baking powder, baking soda, and salt. Whisk together until well mixed.

    Cut the cold butter into small pieces and add it to the flour mixture. Use a pastry cutter or your fingers to work the butter into the flour until the mixture resembles coarse crumbs.

    Incorporate Buttermilk

    Make a well in the center of the mixture and pour in the buttermilk. Stir gently with a fork until just combined. Do not overmix.

    Shape the Biscuits

    Turn the dough onto a lightly floured surface and knead gently for about 5-6 times. Pat the dough to about 1-inch thickness and cut out biscuits using a round cutter.

    Place the biscuits on a baking sheet lined with parchment paper and bake for 12-15 minutes, or until golden brown.

For the Sausage Patties

    In a bowl, combine the ground pork sausage, black pepper, sage, garlic powder, onion powder, and salt. Mix until combined.

    Shape the sausage mixture into small patties, about 2-3 inches in diameter.

    In a skillet over medium heat, cook the sausage patties for about 4-5 minutes on each side or until cooked through and browned.

For the Sausage Gravy

    In the same skillet used for the sausage, melt the butter over medium heat. Sprinkle in the flour, whisking constantly for about 1-2 minutes until lightly golden.
