Crust Preparation

Make the Dough
In a large mixing bowl, combine 2.5 cups of all-purpose flour and 0.5 tsp of salt. Cut in 1 cup of cold, unsalted butter until the mixture resembles coarse crumbs.

Add Ice Water
Stir in 6 tbs of ice water, one tablespoon at a time, until the dough comes together. The dough should be moist but not sticky.

Chill the Dough
Divide the dough in half, shape into disks, wrap in plastic wrap, and refrigerate for at least 1 hour.

Prepare Apples
In a large bowl, combine 6 cups of sliced apples with 0.75 cups of granulated sugar, 0.25 cups of brown sugar, 1 tsp of ground cinnamon, 0.25 tsp of nutmeg, 1 tbs of lemon juice, 2 tbs of all-purpose flour, and 1 tsp of vanilla extract. Toss until apples are well coated.

Add Filling
Pour the apple filling into the crust, making sure to distribute evenly.

Top the Pie
Roll out the second disk of dough and place it over the filling. Trim any excess dough, and crimp the edges to seal. Cut slits in the top crust to allow steam to escape.

Egg Wash and Sprinkle
Brush the top crust with the beaten egg and sprinkle with 1 tsp of granulated sugar.

Bake the Pie
Bake in the preheated oven for 15 minutes. Then reduce the temperature to 350°F (175°C) and continue baking for 30-35 minutes, until the apples are soft and the crust is golden brown.

Let the pie cool for at least 15 minutes before slicing. Serve warm with a scoop of vanilla ice cream.
