Cooking the Steak

Prepare the Steak
Take the top sirloin steak out of the refrigerator and let it come to room temperature for about 30 minutes before cooking. This helps in cooking the steak evenly.

Rest the Steak
Remove the steak from the heat and let it rest for at least 5 minutes before slicing.
Preparing the Eggs and Hash Browns

Cook the Hash Browns
In a separate skillet, melt 1 tablespoon of butter over medium heat. Add the hash browns and season with salt and pepper. Cook for about 5-7 minutes, stirring occasionally, until they are crispy and golden brown.

Scramble the Eggs
While the hash browns are cooking, crack the eggs into a bowl, add a pinch of salt and whisk until well combined. In another skillet, melt the remaining tablespoon of butter over medium heat. Pour in the eggs and cook, stirring gently, until just set and slightly creamy, about 3-4 minutes.
Serving the Dish

Plate the Steak, Eggs, and Hash Browns
Slice the rested steak against the grain. On a plate, serve the sliced steak alongside the scrambled eggs and hash browns. Optionally, add your choice of toast or prepare buttermilk pancakes.

Prepare Optional Pancakes
If you choose pancakes, mix the buttermilk pancake mix with milk and one egg according to package instructions. Cook on a hot griddle until golden brown on both sides. Serve with maple syrup on top.
