    Cook the Spaghetti

    Bring a large pot of salted water to a boil. Add the spaghetti and cook according to package instructions until al dente.

    Prepare the Pancetta

    While the spaghetti is cooking, heat a large skillet over medium heat. Add the pancetta and cook until crispy, about 4-5 minutes. Remove from heat and set aside.

    Mix Eggs and Cheese

    In a bowl, whisk together the eggs and grated pecorino cheese until well combined. Add a generous amount of black pepper.

    Combine Ingredients

    Once the spaghetti is cooked, reserve 1 cup of pasta water, then drain the pasta. Quickly add the hot pasta to the skillet with the pancetta and toss to combine.

    Add Egg Mixture

    Remove the skillet from heat and pour the egg and cheese mixture over the spaghetti, tossing quickly to create a creamy sauce. If the mixture is too thick, add reserved pasta water a little at a time until desired consistency is reached.

    Serve immediately with extra pecorino cheese and black pepper on top.
