    Prepare Gelatin

    In a small bowl, sprinkle the gelatin powder over the water and let it sit for about 5 minutes until it blooms.

    Heat Cream Mixture

    In a saucepan, combine the heavy cream, whole milk, and sugar. Heat over medium heat until the sugar dissolves and the mixture is warm, but not boiling.

    Add Gelatin

    Remove the saucepan from heat and stir in the bloomed gelatin until completely dissolved. Add the vanilla extract and mix well.

    Chill the Mixture

    Pour the mixture into individual serving cups or ramekins. Allow to cool at room temperature for about 30 minutes, then refrigerate for at least 4 hours or until set.

    Prepare Berry Sauce

    To make the berry sauce, combine 2 cups of mixed berries (such as strawberries, blueberries, and raspberries) with 1/4 cup of sugar and 1 tablespoon of lemon juice in a saucepan. Cook over medium heat until the berries release their juices and the sauce thickens, about 10 minutes. Let it cool.

    Serve

    Once the panna cotta is set, unmold it onto a plate and drizzle with the berry sauce before serving.
