Preparation and Cooking

Prepare the Calamari
Rinse the calamari rings under cold water and pat them dry with paper towels.

Marinate
Soak the calamari rings in buttermilk for at least 30 minutes to tenderize.

Mix the Coating
In a large bowl, combine the flour, cornstarch, salt, black pepper, paprika, and garlic powder.

Heat the Oil
In a deep pot or fryer, heat the vegetable oil to 375°F (190°C).

Coat the Calamari
Remove the calamari from buttermilk, allowing excess to drip off, then dredge in the flour mixture until well coated.

Fry the Calamari
Carefully drop the coated calamari rings into the hot oil in batches, frying until golden brown (about 2-3 minutes per batch).

Drain and Serve
Remove the fried calamari and place on paper towels to drain excess oil. Serve hot with marinara sauce and a sprinkle of red pepper flakes.
