Pasta Preparation

Cook the Pasta
In a large pot, bring salted water to a boil. Add the angel hair pasta and cook according to the package instructions until al dente, about 3-4 minutes. Drain and set aside.
Vegetable Sauté

Sauté the Broccoli
In a large skillet, heat 1 tablespoon of olive oil over medium heat. Add the broccoli florets and sauté for about 4-5 minutes until tender but still crisp. Remove from the skillet and set aside.

Sauté the Tomatoes and Spinach
In the same skillet, add another tablespoon of olive oil. Add the cherry tomatoes and sauté for 2 minutes until they start to soften. Add the spinach and cook until wilted, about 1-2 minutes. Combine with the broccoli and set aside.

Scampi Sauce Preparation

Make the Scampi Sauce
In the same skillet, reduce the heat to medium. Add 4 tablespoons of butter and let it melt. Pour in the chicken broth and white wine, scraping the bottom of the skillet to deglaze. Add red pepper flakes and simmer for 5-7 minutes until slightly reduced.

Finish the Sauce
Stir in the lemon juice and chopped parsley. Adjust seasoning with salt and pepper to taste.

Combine Everything
In a large serving bowl, toss the cooked angel hair pasta with the sautéed vegetables and scampi sauce. Plate the pasta and top with the cooked salmon fillets.

Garnish with additional parsley if desired and serve immediately.
