Pasta Preparation

Cook the Pasta
In a large pot of boiling salted water, cook the angel hair pasta according to package instructions until al dente. Drain and set aside.
Vegetable Sauté

Sauté the Vegetables
In a large skillet over medium heat, add a drizzle of olive oil. Add onions and sauté for 2-3 minutes until translucent. Add mushrooms, red bell pepper, zucchini, and broccoli. Cook for an additional 5-7 minutes until the vegetables are tender. Stir in the spinach and cook until wilted. Remove from skillet and set aside.

Cook the Salmon
In the same skillet, add a little more olive oil if needed and increase the heat to medium-high. Season the salmon fillets with salt and black pepper. Place the salmon in the skillet and cook for 4-5 minutes on each side or until the salmon is cooked through and flakes easily with a fork. Remove from skillet and set aside.
Scampi Sauce Preparation

Make the Scampi Sauce
In the same skillet, reduce heat to medium and add the butter. Once melted, add minced garlic and sauté for 1-2 minutes until fragrant. Pour in the white wine and lemon juice, bringing it to a simmer. Allow the sauce to cook for about 3-5 minutes until slightly reduced. Stir in chopped parsley and season with salt and black pepper to taste.
Combining the Dish

Combine and Serve
In a large serving bowl, combine the cooked pasta and sautéed vegetables. Place the salmon fillets on top and drizzle with the scampi sauce. Garnish with additional parsley if desired. Serve hot.
