Cake Preparation

Preheat Oven
Preheat your oven to 350°F (175°C). Grease and flour two 9-inch round cake pans.

Mix Dry Ingredients
In a large mixing bowl, whisk together the flour, sugar, baking powder, and salt.

Cream Butter and Sugar
In another bowl, cream the softened butter until light and fluffy. Gradually add the granulated sugar and mix until well combined.

Add Eggs and Zest
Add the eggs one at a time, mixing well after each addition. Then stir in the lemon zest.

Combine Mixtures
Gradually add the dry ingredient mixture to the wet mixture, alternating with lemon juice and milk. Mix until just combined.

Bake the Cake
Divide the batter evenly between the two prepared cake pans. Bake for 25-30 minutes or until a toothpick inserted in the center comes out clean.

Cool the Cakes
Allow the cakes to cool in the pans for 10 minutes, then transfer to wire racks to cool completely.
Lemon Custard Filling Preparation

Combine Ingredients
In a saucepan, whisk together the egg yolks, sugar, lemon juice, and lemon zest.

Thicken Custard
In a separate bowl, mix cornstarch with milk until smooth. Gradually add to the egg mixture in the saucepan.

Cook Custard
Cook over medium heat, stirring constantly until the mixture thickens and begins to bubble. Remove from heat and stir in butter until melted.

Cool Custard
Transfer the custard to a bowl, cover with plastic wrap (pressing it directly onto the surface to prevent a skin), and refrigerate until chilled.

In a large mixing bowl, cream together the softened butter and powdered sugar until smooth. Add the lemon juice and zest and mix until well combined.
Assembly

Assemble the Cake
Once the cakes are completely cool, place one layer on a serving plate. Spread the lemon custard filling over the top of the first layer.

Add Second Layer
Place the second layer of cake on top of the custard-filled layer.

Frost the Cake
Use the lemon frosting to cover the top and sides of the cake. Decorate as desired.

For best flavor, refrigerate the cake for at least 30 minutes before serving.
