Cannoli Shells

Make the Dough
In a large bowl, combine the all-purpose flour, egg yolks, granulated sugar, cocoa powder, and salt. Mix well.

Add Liquids
Add the white wine (or vinegar) and water to the dry ingredients. Knead the dough until it becomes smooth and elastic, about 5-7 minutes.

Rest the Dough
Cover the dough with plastic wrap and let it rest for at least 30 minutes at room temperature.

Roll Out the Dough
Once rested, roll out the dough to about 1/8-inch thickness on a floured surface.

Cut the Shells
Using a round cutter, cut out circles from the rolled dough. Wrap each circle around a cannoli tube, sealing the edges with a bit of water.

Fry the Shells
Heat oil in a deep frying pan over medium-high heat. Fry the cannoli shells until golden brown, about 2-3 minutes. Remove and drain on paper towels.

Prepare the Filling
In a mixing bowl, beat the cream cheese until smooth. Gradually add the powdered sugar and continue to beat until well combined.

Add Flavoring
Stir in the vanilla extract and mix until fully incorporated.

Fold in Chocolate Chips
Gently fold in the mini chocolate chips into the cream cheese mixture.

Whip the Cream
In a separate bowl, whip the heavy cream until stiff peaks form.

Combine Mixtures
Carefully fold the whipped cream into the cream cheese mixture until combined.

Using a piping bag, fill each cooled cannoli shell with the chocolate chip cream cheese filling.
