Calamari Preparation

Prepare the Calamari
Rinse the calamari rings under cold water and pat them dry with paper towels.

Set Up the Breading Station
In three separate bowls, place the flour in the first bowl, whisk the eggs in the second bowl, and combine the breadcrumbs, salt, black pepper, garlic powder, and parmesan cheese in the third bowl.

Bread the Calamari
Dredge each calamari ring in the flour, shaking off the excess. Dip it into the whisked eggs, then coat it in the breadcrumb mixture, pressing gently to adhere.

Heat the Oil
In a large deep skillet, heat the oil over medium-high heat until it reaches 350°F (175°C).

Fry the Calamari
Fry the breaded calamari rings in batches for about 2-3 minutes, or until golden brown. Use a slotted spoon to transfer them to a paper towel-lined plate to drain excess oil.

Add Tomatoes and Seasoning
Pour in the crushed tomatoes and add oregano, salt, and black pepper. Stir to combine.

Simmer the Sauce
Let the sauce simmer for about 15-20 minutes, stirring occasionally. Stir in the fresh basil just before serving.

Serve the fried calamari hot, garnished with extra parmesan cheese if desired, alongside a small bowl of marinara sauce and a lemon wedge.
