Crispy Green Beans

Prepare green beans
Rinse 1 lb fresh green beans under cold water. Trim the stem ends (snap or cut off) and pat the beans thoroughly dry with a kitchen towel or paper towels. Dry beans will help the batter cling and prevent sputtering in the oil.

Make batter
In a medium bowl whisk together 3 tbs all-purpose flour, 2 tbs cornstarch, 1 tsp baking powder, 1 tsp salt, 1 tsp black pepper, and 1 tsp garlic powder until evenly combined. If using the egg, beat 1 large egg lightly in a separate small bowl and whisk it into the dry mix. Add about 3 oz cold sparkling water gradually and stir gently until a slightly thick, but runny batter coats the back of a spoon. Add the 3 ice cubes to keep the batter cold while you work (remove before dipping). The batter should be just thin enough to coat the beans evenly — add a little more cold water or a pinch more flour if needed to adjust consistency.

Heat oil
Pour about 1 cup vegetable oil into a medium deep skillet or a heavy-bottomed pot (oil depth ~1 inch) and heat over medium-high until it reaches 350°F (175°C). If you don't have a thermometer, test by dropping a small amount of batter into the oil: it should sizzle and float up immediately with steady bubbles.

Batter and fry
Working in small batches (6–8 beans per batch depending on pan size), pat the beans lightly one more time, then dip and coat each bean in the batter, letting excess drip back into the bowl. Carefully lower the battered beans into the hot oil with tongs or a slotted spoon. Fry, turning occasionally, until the batter is golden and crisp, about 2–3 minutes per batch depending on thickness. Avoid overcrowding to keep oil temperature steady.

Drain and season
Use a slotted spoon or spider to transfer fried beans to a paper towel-lined tray. While still hot, sprinkle with 1/2 tsp fine sea salt or flaky salt to taste. Repeat with remaining beans and batter, maintaining oil temperature between 325–350°F (160–175°C) by adjusting heat as needed. If oil gets too cool, allow it to return to temperature between batches.

Keep crisp
If making large quantities, keep finished batches on a wire rack set over a baking sheet in a 200°F (95°C) oven for up to 15–20 minutes to hold crispness before serving. Do not stack fried beans.
Spicy Tangy Dipping Sauce

In a small bowl combine 1 tbs mayonnaise and 1 tbs plain Greek yogurt. Stir in 1 tsp sriracha, 1 tsp rice vinegar, 1 tsp honey, and 1 tsp fresh lime juice until smooth. Fold in 1 tsp finely chopped cilantro if using. Season with 1/4 tsp salt and 1/8 tsp black pepper, taste and adjust — add more sriracha for heat, more honey for sweetness, or more lime for acidity. Chill briefly if time allows to let flavors meld.
Serve

Arrange crispy green beans on a platter with lime wedges and the dipping sauce in a small bowl. Serve immediately so the beans stay crunchy. Squeeze lime over beans just before eating for extra brightness.
