Method

Tea

  1. 1

    Heat water

Bring 1 cup (240 ml) of fresh cold water to a simmer. For jasmine green tea, heat until just below boiling — around 175–185°F (80–85°C). If you don't have a thermometer, bring to a boil and let sit uncovered 1 minute to cool slightly.

  2. 2

    Steep tea

Place 1 teaspoon loose jasmine green tea in an infuser or teapot. Pour the hot water over the tea leaves. Cover and steep for 2–3 minutes for a light, floral cup. Steep up to 3 minutes for stronger flavor; avoid steeping longer to prevent bitterness.

  3. 3

    Finish

Remove the infuser or strain the leaves into your mug. Stir in 1 teaspoon honey while the tea is hot, adjusting to taste. If desired, add 1/2 teaspoon fresh lemon juice for brightness (optional).

  4. 4

    Serve

Serve immediately. Refill as desired using the same steeping parameters: use 1 teaspoon tea per cup and repeat the above steps. Note that subsequent steeps may be slightly milder; you can increase steep time by 30–60 seconds for a second infusion.

Equipment

  1. 5

Use a clean kettle or pot to heat water. Use a teapot or mug and a strainer or infuser to hold the loose tea. Pre-warming the teapot or mug by rinsing briefly with hot water helps maintain steeping temperature.
