Prepare and Sweeten Lime Juice

Juice the limes
Roll each lime on the counter with firm pressure to soften, then cut in half and juice until you have about 3/4 to 1 cup (180–240 ml) of fresh lime juice. Strain the juice through a fine mesh sieve into a pitcher to remove seeds and excess pulp.

Dissolve sugar
If using granulated sugar: add the 3 tablespoons sugar to the warmest 1/2 cup of the water (or a few tablespoons of hot water) and stir until fully dissolved to avoid grittiness. If using simple syrup, skip this step and add 2 tablespoons syrup later when mixing.
Mix and Chill

In a 1.5–2 liter pitcher, combine the strained fresh lime juice, the remaining cold water (about 3 1/2 to 4 cups total including the water used to dissolve sugar), and the dissolved sugar (or 2 tablespoons simple syrup). Stir thoroughly and taste. Adjust sweetness by adding more sugar/simple syrup a teaspoon at a time until balance is bright and pleasant.

If desired, add a very small pinch of salt (about 1/8 to 1/4 teaspoon) to brighten the flavors and stir well.

Refrigerate the limeade for 10–15 minutes to chill and let flavors marry, or serve immediately over ice for quickest service.
Serve

Fill glasses with ice cubes (about 1/2 cup ice per glass). Pour the chilled limeade over ice, leaving a little room at the top.

Garnish each glass with a lime slice or wedge and 2–3 mint leaves if using. Stir briefly and serve cold.

Makes approximately 4 servings (about 1 cup/240 ml each). Adjust citrus or sweetness to preference and scale recipe as needed.
