Simmer the Broth
Bring the pot to a boil, then lower the heat to a simmer. Skim any impurities that rise to the surface. Allow the broth to simmer for at least 3 hours, adding more water as needed to keep the bones submerged.

Cook the Noodles
While the broth is simmering, prepare the rice noodles according to package instructions. Drain and set aside.

Prepare the Beef
Slice the beef sirloin or brisket thinly against the grain. If desired, you can briefly freeze the beef to make slicing easier.

Assemble the Pho
Once the broth is ready, strain it to remove solids. Place cooked noodles in bowls, top with raw beef slices, and ladle hot broth over the top. The heat from the broth will cook the beef.

Garnish and Serve
Serve the pho with fresh herbs, bean sprouts, lime wedges, and sliced chili peppers on the side, allowing each person to customize their bowl.
