    Prepare the Potatoes and Onion

    Peel and slice the potatoes into thin rounds. Chop the onion into small pieces.

    Cook the Potatoes and Onion

    In a large skillet, heat the olive oil over medium heat. Add the sliced potatoes and onions, and cook until the potatoes are tender and slightly golden, about 15-20 minutes. Stir occasionally to prevent sticking.

    Beat the Eggs

    In a large bowl, crack the eggs and whisk them together. Season with salt and pepper.

    Combine and Cook the Tortilla

    Once the potatoes and onions are cooked, drain excess oil and add them to the bowl with the beaten eggs. Mix until well combined. Pour the mixture back into the skillet and cook over low heat for about 5-7 minutes until the bottom is set.

    Flip the Tortilla

    To flip, place a large plate over the skillet and carefully invert the tortilla onto the plate. Then slide it back into the skillet to cook the other side for another 5-7 minutes.
