Combine Ingredients
In a cocktail shaker, combine the pisco, fresh lime juice, simple syrup, and egg white.

Dry Shake
Shake the mixture vigorously without ice for about 15 seconds to aerate the egg white.

Add Ice and Shake Again
Add ice to the shaker and shake again for another 15-20 seconds until well chilled.

Strain and Serve
Strain the cocktail into a chilled coupe or rocks glass.

Garnish
Add 2 dashes of Angostura bitters on top of the foam created by the egg white.
