    Prepare the crust

    Preheat your oven to 350°F (175°C). In a medium bowl, mix the graham cracker crumbs, melted butter, and salt until well combined. Press the mixture firmly into the bottom of a 9-inch springform pan to form the crust.

    Make the cheesecake filling

    In a large mixing bowl, beat the cream cheese with an electric mixer until smooth and creamy. Gradually add in the granulated sugar, beating until well combined. Add the sour cream and vanilla extract, mixing until smooth. Finally, add the eggs one at a time, mixing well after each addition.

    Bake the cheesecake

    Pour the cheesecake filling over the prepared crust in the springform pan. Bake in the preheated oven for about 55-60 minutes, or until the center is set and only slightly jiggly. Turn off the oven and leave the cheesecake inside with the door ajar for 1 hour to cool gradually.

    Cool and refrigerate

    Remove the cheesecake from the oven and allow it to cool to room temperature. Once cooled, cover and refrigerate for at least 4 hours, preferably overnight.

    Prepare the berry compote

    In a small saucepan, combine mixed berries (fresh or frozen), 1/4 cup of sugar, and 1 tablespoon of lemon juice. Cook over medium heat until the mixture starts to bubble and the berries break down, about 5-7 minutes. Remove from heat and let cool.

    Serve

    Once the cheesecake is fully chilled, remove it from the springform pan and top with the berry compote before serving.
