Prepare the Ingredients
Clean the black trumpet and matsutake mushrooms and slice them. Peel and finely chop the black garlic. Peel the cipollini onions and slice them thinly.

Sauté the Onions
In a large skillet, heat the olive oil over medium heat. Add the sliced cipollini onions and sauté until they are soft and translucent, about 5-7 minutes.

Add Garlic and Seasoning
Stir in the chopped black garlic and cook for 1-2 minutes. Season with salt and black pepper.

Incorporate Truffle and Goat Cheese
Finely shave or grate the burgundy truffle over the mushroom mixture. Remove from heat and gently fold in the goat cheese until just combined.

Finish with Maple Syrup
Drizzle the maple syrup over the mixture and gently stir to combine all flavors.

Serve
Serve warm as a side dish or over a bed of grains or pasta.
