Add the Arborio rice to the saucepan and stir for 1-2 minutes until the rice is lightly toasted.

Gradually add the dashi stock, one ladle at a time, stirring continuously until the liquid is absorbed before adding more. Continue until the rice is creamy and cooked al dente, about 18-20 minutes.

Once the risotto is ready, fold in the chopped lobster meat and chives. Season with salt and black pepper to taste. Keep warm.

Place the trout skin-side down in the skillet and cook for about 4-5 minutes. Flip and cook for an additional 2-3 minutes until the fish is cooked through and flakes easily.

Plate the Dish
To serve, spoon a generous amount of the dashi risotto onto each plate. Top with the cooked fjord trout and garnish with finger lime pearls and extra chives.
