Preparing the Artichokes

Prepare the Artichokes
Trim the stems and remove the tough outer leaves of the artichokes. Cut the artichokes in half and scoop out the fuzzy centers with a spoon.

Blanch the Artichokes
In a large pot of boiling salted water, cook the artichoke halves for about 5 minutes. Drain and let cool.
Breading and Frying

Prepare the Breading Station
In a shallow dish, combine flour, cornstarch, salt, black pepper, and garlic powder. In another dish, beat the eggs. In a third dish, place the breadcrumbs.

Bread the Artichokes
Dip each artichoke half into the flour mixture, then dip into the egg, and finally coat with breadcrumbs.

Fry the Artichokes
Heat vegetable oil in a deep pan over medium-high heat. Fry the breaded artichokes in batches until golden brown, about 3-4 minutes per side. Drain on paper towels.

In a bowl, mix together mayonnaise, lemon juice, minced garlic, salt, and black pepper until well combined.
