Prepare the Crêpe Batter
In a mixing bowl, whisk together the flour, milk, eggs, melted butter, vanilla extract, and salt until smooth and well combined.

Cook the Crêpes
Heat a non-stick skillet over medium heat. Pour about 1/4 cup of the batter into the skillet, swirling it to coat the bottom evenly. Cook for 1-2 minutes until the edges start to lift, then flip and cook for another 1-2 minutes. Transfer to a plate and repeat with the remaining batter, stacking the crêpes.

Make the Filling
In a mixing bowl, beat together the cream cheese, mascarpone cheese, powdered sugar, and vanilla extract until creamy and smooth. In another bowl, whip the heavy cream until soft peaks form, then gently fold it into the cheese mixture until fully combined.
Chocolate Ganache

Prepare the Ganache
In a small saucepan, heat the heavy cream over medium heat until it just begins to simmer. Remove from heat and add the semisweet chocolate chips, stirring until completely melted and smooth.
Assembling the Cake

Layer the Crêpe Cake
On a serving plate, place one crêpe down and spread a layer of the cream cheese and mascarpone filling over it. Repeat this process with the remaining crêpes and filling, stacking them on top of each other.

Top with Ganache and Cherries
Once all crêpes are layered, pour the chocolate ganache over the top, allowing it to drip down the sides. Finally, top with Amarena cherries for garnish.
