Steak Preparation

Season the Steak
Pat the sirloin steaks dry with paper towels. Season both sides generously with salt and black pepper.

Sear the Steak
In a large skillet, heat olive oil over medium-high heat until shimmering. Add the steaks and sear for about 3-4 minutes on each side for medium-rare, or until your desired doneness.

Add Flavor
During the last minute of cooking, add butter, crushed garlic cloves, and thyme to the skillet. Baste the steaks with the melted butter and aromatics.

Rest the Steak
Remove the steaks from the skillet and let them rest on a cutting board for 5-10 minutes before slicing.
Frites Preparation

Prepare the Potatoes
Peel the russet potatoes and cut them into thin strips (about 1/4 inch thick) to create frites.

Soak the Potatoes
Place the potato strips in a bowl of cold water and let them soak for at least 30 minutes. This helps to remove excess starch and makes the frites crispier.

Dry the Potatoes
Drain the soaked potatoes and pat them dry with a clean kitchen towel.

Heat the Oil
In a large heavy-bottomed pot, heat vegetable oil to 350°F (175°C). Use a thermometer for accuracy.

Fry the Potatoes
Working in batches, fry the potato strips for 5-7 minutes, or until golden and crispy. Remove with a slotted spoon and drain on paper towels.

Season the Frites
While still hot, sprinkle the frites with salt to taste.
