Pasta

Method

Pasta Preparation

  1. 1

    Cook the Spaghetti

Bring a large pot of salted water to a boil. Add the spaghetti and cook according to package instructions until al dente. Reserve 1 cup of pasta water, then drain the spaghetti and set aside.

Shrimp Scampi Preparation

  1. 2

    Sauté Shrimp

In a large skillet, heat the olive oil and 2 tablespoons of butter over medium heat. Once the butter has melted and is bubbling, add the minced garlic and red pepper flakes. Sauté for about 1 minute until fragrant.

  2. 3

    Cook the Shrimp

Add the shrimp to the skillet in a single layer. Season with salt and black pepper. Cook for about 2-3 minutes on one side until pink, then flip and cook for another 1-2 minutes until fully cooked.

  3. 4

    Finish the Scampi

Once the shrimp are cooked, reduce the heat to low and stir in the lemon juice and the remaining 2 tablespoons of butter. Add the chopped parsley, stirring to combine. If the sauce is too thick, add a little reserved pasta water until desired consistency is reached.

Combine and Serve

  1. 5

    Combine Pasta and Sauce

Add the cooked spaghetti to the skillet with the shrimp scampi. Toss well to coat the pasta in the sauce. Taste and adjust seasoning if necessary.

  2. 6

    Serve

Divide the shrimp scampi over the spaghetti into serving bowls. Garnish with additional parsley if desired and serve immediately.
