Pasta

Method

Pasta Preparation

  1. 1

    Cook the Pappardelle

Bring a large pot of salted water to a boil. Add the pappardelle pasta and cook according to package instructions until al dente. Drain and set aside, reserving a cup of pasta water.

Bolognese Sauce Preparation

  1. 2

    Sauté Vegetables

In a large skillet, heat olive oil over medium heat. Add the chopped onion, carrot, and celery. Sauté until the vegetables are softened, about 5-7 minutes.

  2. 3

    Add Garlic and Meats

Add minced garlic and cook for another minute. Then add ground beef, ground pork, and Italian sausage. Cook until the meats are browned and cooked through, breaking them apart with a spatula.

  3. 4

    Incorporate Tomato Paste

Stir in the tomato paste and cook for 2-3 minutes to caramelize it slightly.

  4. 5

    Deglaze with Wine

Pour in the red wine and scrape the bottom of the skillet to release any browned bits. Allow the wine to simmer and reduce for about 5 minutes.

  5. 6

    Add Broth and Simmer

Add the beef broth, salt, and black pepper to the skillet. Bring to a gentle simmer, then reduce heat to low and let it cook for about 30 minutes to allow the flavors to meld.

  6. 7

    Finish with Cream

Stir in the heavy cream and chopped basil, and simmer for an additional 5 minutes.

Combine and Serve

  1. 8

    Mix Pasta and Sauce

Add the cooked pappardelle to the skillet with the Bolognese sauce. Toss to combine, adding reserved pasta water as needed to reach the desired sauce consistency.

  2. 9

    Serve

Serve hot, garnished with grated Parmesan cheese and additional basil if desired.
