Panna Cotta Base

Method

Panna Cotta Base

  1. 1

    Prepare Gelatin

In a small bowl, sprinkle the gelatin powder over 6 tablespoons of water. Let it sit for about 5-10 minutes until it blooms.

  2. 2

    Combine Cream and Sugar

In a saucepan, combine the heavy cream, whole milk, and granulated sugar. Heat over medium heat, stirring occasionally until the sugar is dissolved and the mixture is hot but not boiling.

  3. 3

    Add Gelatin and Vanilla

Remove the saucepan from the heat. Add the bloomed gelatin and vanilla extract, stirring until the gelatin is completely dissolved.

  4. 4

    Pour into Molds

Pour the mixture into individual serving cups or molds. Cover with plastic wrap and refrigerate for at least 4 hours, or until set.

Berry Sauce

  1. 5

    Prepare the Berries

In a saucepan, combine the mixed berries, granulated sugar, and lemon juice. Stir gently to combine.

  2. 6

    Cook the Sauce

Cook over medium heat for about 10-15 minutes, stirring occasionally, until the berries have softened and released their juices. Remove from heat and let cool.

  3. 7

    Blend (Optional)

For a smoother sauce, you can blend the mixture using an immersion blender or a regular blender until smooth. Strain if necessary to remove seeds.

  4. 8

    Serve

Once the panna cotta is set, remove from the refrigerator, top with the berry sauce, and serve chilled.
