Adding Tomatoes
Pour in the canned crushed tomatoes and stir well. Add the dried oregano, salt, pepper, and sugar. Bring to a simmer.

Reduce the heat to low and let the sauce simmer for 15-20 minutes, stirring occasionally until it thickens.

Stir in the chopped fresh basil and remove from heat. Set aside to cool slightly.

Preparing the Cheese
Slice the fresh mozzarella into 1/2 inch thick rounds.

Set up a breading station: place all-purpose flour in one shallow dish, beat the eggs in a second shallow dish, and place the bread crumbs in a third shallow dish.

Dredge each slice of mozzarella in flour, followed by the beaten eggs, and finally coat with the bread crumbs. Ensure each slice is well-coated.

In a large skillet, heat 1 cup of olive oil over medium-high heat until shimmering.

Carefully add the breaded mozzarella slices to the skillet. Fry for 2-3 minutes on each side, or until golden brown and crispy.
