Method
Preparing the Calamari

Prep the Calamari
Rinse the calamari rings under cold water and pat them dry with paper towels.

Make the Coating
In a mixing bowl, combine the all-purpose flour, cornstarch, salt, black pepper, paprika, and garlic powder. Mix well.

Soak in Buttermilk
Place the calamari rings in another bowl and cover them with buttermilk. Let them soak for at least 30 minutes in the refrigerator.
Frying the Calamari

Heat the Oil
In a deep pot or large skillet, heat the vegetable oil over medium-high heat until it reaches 350°F (175°C).

Coat the Calamari
Remove the soaked calamari from the buttermilk and allow excess to drip off. Dredge them in the flour mixture until well coated.

Fry the Calamari
Carefully place the coated calamari rings into the hot oil in batches. Fry for about 2-3 minutes until golden brown. Avoid overcrowding the pan.

Drain the Calamari
Once fried, use a slotted spoon to remove the calamari and place them on a plate lined with paper towels to drain excess oil.

Add Cherry Peppers
Add the cherry peppers to the skillet and season with salt. Sauté for about 5 minutes until they are soft and slightly blistered.
Serving

Plate the Dish
Arrange the fried calamari on a serving platter, top with sautéed cherry peppers, and serve with lemon wedges and marinara sauce on the side.
