Agrodolce Apricot Glaze

Preparing the Meatballs

Mix the Ingredients
In a large mixing bowl, combine the ground pork, breadcrumbs, grated Parmesan cheese, minced garlic, egg, chopped parsley, salt, and black pepper. Mix until well combined.

Form the Meatballs
Using your hands, form the mixture into small meatballs, about 1 inch in diameter. Place them on a baking sheet lined with parchment paper.

Preheat the Oven
Preheat your oven to 200°C (400°F).

Cook the Meatballs
Drizzle olive oil over the meatballs and bake in the preheated oven for 20-25 minutes or until they are golden brown and cooked through.
Making the Agrodolce Apricot Glaze

Combine Ingredients
In a small saucepan, combine the apricot preserves, red wine vinegar, honey, cinnamon, red chili flakes, and a pinch of salt.

Cook the Glaze
Heat the mixture over medium heat, stirring frequently until it comes to a gentle boil. Let it simmer for about 5-7 minutes until it thickens slightly.

Finish the Glaze
Remove the saucepan from the heat and let the glaze cool slightly before using.

Glaze the Meatballs
Once the meatballs are cooked, remove them from the oven and drizzle the agrodolce apricot glaze over the top.

Serve the crispy pork meatballs warm with extra glaze on the side if desired.
